I was countering your points about Bill with some facts that I thought would be helpful. I didn't join the discussion earlier, because I don't really have an opinion or know what the term "quintessential Stones song" means, really. It's kinda pointless...

YCAGWYW does not come to mind for me when I say that phrase to myself, but it is one of their most famous songs, concert favorite, and elaborate and powerful productions. The ornateness of the original leaves me cold after 20 years of listening to it, but I found a '73 live version that is great.

I think that YCAGWYW is one of the quintessential Stones songs. It has that Stones sound, regardless of who the drummer on the studio track may be.
